Kaju Kreme Cheeze With A Kick!

I love the idea of eating raw foods and do so whenever possible. Do I only eat raw foods?  No, not yet at least – as I do dream of it.

Why? I feel enormously energetic and clean when I eat fruits, vegetables and nuts! It’s not about giving up anything. It’s about bringing in the good stuff into my self and feeling the difference that a colorful plate makes inside my palette. No matter how much I dance, what I ingest reflects on the outside. I can even tell by the clarity of my skin.

 

Devouring only raw food on a daily basis can seem daunting. The biggest challenges for me are preparation and protein. For example, you often need to soak nuts well in advance of using them. Or use seemingly obscure ingredients and funky tools like a dehydrator, which has been on my short list to purchase for quite a while. As soon as I can figure out where exactly I’m going to find the counter space! Given the enormous number of calories I burn when I bollyfit, my body craves immense intakes and and sometimes I’m not prepared.

Invite you to try this fun and protein packed alternative to cream cheese that I adapted from a basic cashew cream cheese recipe. The original recipe is from one of my favorite cookbooks, Raw Food for Real People, by Rod Rotondi. Inspired by my passion for cooking Indian style, I added chili peppers to the original recipe. And black pepper. And a few extra doses of my fav sphere, onion!

 

Kaju Kreme Cheeze With A Kick!
Soak cashews for a few hours
Then, in a blender, combine:
1 lemon, peeled and quartered
1 tblspn each: coconut oil, agave nectar, chopped cilantro
1 clove garlic
Chopped onion, green chili peppers and fresh ground black pepper to taste
Add up to 1/2 cup water as needed to blend.
Rinse and drain cashews and add to blender slowly.
stop and stir the mixture as needed.
The Kaju Kreme Cheeze will get thicker after you cover and put it in the fridge, so keep that in mind when adding water. Chill before serving. Garnish with chopped scallions or herb of your choice.

(I served this with fresh apple slices at a fun BollyFit party recently. The sweetness of the apple was a soothing juxtaposition to the Kaju Kreme Cheeze with a Kick and everyone loved it! (See photo from actual party above!) For a sweeter version of the Kaju Cheeze, next time I’m going to experiment next time by adding chopped dates and pistachios for a baklava feel!
